Abstract
Protein targeting is the result of more than just putting a protein in a particular place in a cell. The system of choosing a plant that is appropriate for the gene of interest, an organ or tissue that is the best location for the protein, and combining this with the most appropriate subcellular location create the environment for the protein. This chapter addresses these issues from an output trait point of view — pharmaceutical proteins, vaccines, and industrial products expressed in several plant systems such as leaves, seeds, and hairy roots — including the advantages and disadvantages of each. Also discussed are issues involved in choosing a plant system, including scale-up of the systems for commercial purposes.
